Now, if you don’t have any buttermilk in the fridge, don’t allow that to discourage you from trying this recipe. I never have buttermilk in the fridge, and I have no intentions of buying it just to make pancakes! I scoured the internet for substitutions for buttermilk and came across an easy way to make my own.
How to make buttermilk:
Pour one tablespoon of white vinegar into a measuring cup. Pour milk into the measuring cup until it reaches the 1 cup measurement line. Let sit for 5 minutes to “sour” and you have your own buttermilk!
I was a little leery of adding vinegar to the milk but the recipe came out just fine.
Once you’ve tried making this buttermilk pancakes from scratch recipe for the first time, you’ll wonder why you ever used a box pancake mix!
You can also add your own mix-ins to the batter to come up with any flavor combination you like. We are partial to mini chocolate chips because we just love chocolate, but I’ve also tried this recipe with a teaspoon of cinnamon and a dash of cloves and even just a tablespoon of cocoa powder and an extra tablespoon of sugar to make it sweeter and chocolaty.
Of course you can skip the extra sweeteners and just add 1/4 of cup diced apples and a teaspoon of cinnamon for a fruity breakfast.
For a special birthday breakfast, try adding 2 tablespoons of sprinkles to the batter and garnishing it with a dollop of whipped cream!

Buttermilk Pancakes from Scratch with Chocolate Chips Recipe
Yield: 16 pancakes
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients:
2 cups all-purpose flour
2 tablespoon sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs
2 cups buttermilk
1/4 cup safflower oil
1/2 cup chocolate chips
2 tablespoons butter (for cooking the pancakes)
Directions:
Whisk your flour, sugar, baking powder, baking soda, and salt in a medium bowl. Slowly beat in the eggs and stir in the buttermilk and your oil. Stir-in chocolate chips (or leave plain) until combined, the batter should be lumpy. Do not overstir!
Heat a nonstick pan to medium heat and add a teaspoon of butter, or spray with nonstick cooking spray.
Pour your pancake batter into the pan about a 1/4 cup at a time, cooking until the top begins to bubble. Depending on your heat, this should take roughly 1 minute. Flip the pancake and cook until it is golden brown on both sides.
Add a few chocolate chips for garnish and top with syrup, or just eat it plain with a dab of butter like we do!
