Ah, comfort food. I love a bowl of soup as much as the next person, but, did you know that lentil soup is actually really great for your body? Keep reading for this great lentil soup recipe, and to learn a little more about the unassuming but wonderful lentil.
I think I’ve said it before, but, I haven’t always been a fan of beans and lentils. Luckily, I’m a recent convert and I love knowing that this protein rich food is so good for me, on top of being yummy.
Did you know that lentils have been shown to reduce the risk of coronary heart disease, lower your cholesterol, provide a great source of fiber and they are also shown to help reduce triglycerides?
I don’t know about you, but knowing that makes this bowl of lentil soup look even more delicious.
It’s still snowing here in Ohio, and I have a sinking feeling that while March came in like a lion, it’s going to go out in the same fashion. Cozing-up with some comfort food seems to take the edge off a little.

Lentil soup recipe
1 can of lentils
1 can garbanzo beans/chic peas
4-6 cups of chicken stock
½ small onion, chopped
2 large cloves of fresh garlic
4 medium carrots, chopped
3 celery stalks, chopped
2 chicken breasts, cooked and cut into smaller pieces
1 tablespoon extra-virgin olive oil
season to taste
1. Sauté the onions and garlic in the olive oil. When the onions are translucent add in the chicken stock, carrots, celery and chic peas. Let simmer until the carrots are cooked most of the way through.
2. Add the lentils and cooked chicken. Continue simmering for until the chicken can be easily pulled apart with a fork and the carrots and celery are done. Season to taste and enjoy.
