Stir-fry Veggies & Chicken Recipe
Before I had kids, I can remember hearing other parents talking about their “picky eaters.” It’s funny how things like this don’t register with you until it’s a battle you’re facing at your own dinner table every night.
I ended up with two kids who are the definition of “picky eaters,” but, there are a few meals that I can always prepare with confidence knowing that they are nutritious and crowd pleasers in my home. One of those recipes is this easy chicken stir-fry featuring delicious Kraft Fat Free Zesty Italian Dressing!
I’ve used Italian dressings in stir-fry dishes before, and the first time I actually tried it because I didn’t have anything else on hand. Little did I know that this particular dressing would be so delicious when incorporated into a chicken and vegetable stir-fry dish!
The recipe is incredibly simple, consisting of chicken tenderloin pieces, your favorite fresh, seasonal vegetables and a little Kraft Fat Free Zesty Italian Dressing. The Kraft dressing gives the dish that little kick of flavor it needs, without being too overpowering flavor wise for the children.
I like to use mushrooms, red and green peppers and broccoli in our stir-fry, but, you can use any fresh vegetables that your family prefers. My kids also love the tender chicken tenderloins because they are so incredibly tender, moist and juicy.
This recipe is so simple to whip up on school nights when schedules are tight. It’s definitely a family favorite in my home, in fact, we’re going to be having it again tonight! I hope you enjoy the recipe as much as we do.
Easy stir-fry vegetables and chicken recipe
1 lb. chicken tenderloins
3 cups fresh seasonal vegetables, chopped
1/4 cup Kraft Zesty Italian Dressing
1. Wash and chop your favorite seasonal vegetables, about 3 cups. I used broccoli, red, yellow and green peppers and mushrooms.
2. Place chopped veggies in a microwave safe bowl with about two tablespoons of water, cover and heat for about 2 minutes. This will steam and soften your veggies a bit before frying. Here's a great tutorial on how to steam veggies in the microwave.
3. Cut chicken tenderloins into small pieces and add to a hot skillet that has been sprayed with PAM Cooking Spray. Cook chicken for 2-3 minutes or until just done.
4. Add steamed vegetables to skillet with chicken and stir fry for an additional 3-5 minutes with dressing. Enjoy!
