Have I ever mentioned that breakfast is my favorite meal of the day? It’s true, and recipes like this one for quick berry waffles will always earn a thumbs-up from me!

Breakfast is also the time of day when I can coax both of my children into eating. They wake up ravenous, and then spend the rest of the day with seemingly zero appetite, so, I try to take advantage of that first meal.

Please tell me that my little ones are not the only seriously picky eaters in this world. It’s a constant challenge, so I try to make the most of breakfast time.

2 cups Bisquick Heart Healthy mix

1 1/3 cups milk

2 eggs

2 tablespoons coconut oil

½ cup mixed organic frozen berries


1. Preheat the waffle iron to medium. Let the frozen berries sit at room temperature for 10 to 15 minutes before mixing into the batter.

2. Mix Bisquick, milk, eggs and coconut oil. Coconut oil is a healthier and tasty alternative to vegetable oil. Mix the berries into the batter and let rest for a few minutes.

3. Grease the waffle iron with coconut oil and cook until golden brown and slightly crispy.
